So for those of you looking for something to cut those carbs here ya go.
4 boneless pork chops
Salt & Pepper
2 tbsp. olive oil
10 oz. shiitake mushrooms, sliced
2 cloves garlic, minced (2 tsps of the jar stuff works too)
1/2 cup Half and half
1/2 cup grated Parmesan
1 tsp dried oregano
A dash, or two, of crushed red pepper flakes
3 cups baby spinach (I usually do 3 handfuls i.e. whatever I can grab out of the bag x3)
Salt and pepper the pork chops. Put oil in skillet, turn to medium heat. When hot, add pork chops. Cook them until their done and golden brown. Remove from skillet and place on a plate
Add mushrooms to skillet. Cook them down until soft about five or six minutes. Then add garlic, stir and cook for about another minute.
Add half and half, parmesan, oregano, and red pepper flakes. Give it a minute and taste...at that point you can add more salt and pepper if needed. Simmer until it starts to thicken...three or four minutes then add the spinach. Cook for another two or three minutes...i.e. that massive amount of spinach has more or less vanished into the sauce.
Put the pork chops back in the skillet and warm through...roughly six minutes.
